The type of technique we use to design the stair most of the time depends on the architect involved as well as the kind of stair that is required. Most of our architects design stairs using CAD drawings. Due to their work on numerous stairs all over the world, they have stair designs for almost all conceivable needs (although I must admit some needs take us by surprise!).
Then there is the more traditional kind of architect who prefers to sketch stairs by hand and to use his or her hands to come up with a plan for the particular stairs. They're surprisingly creative and beautiful stairs capturing more art than a computer aided design stair.
Such architects are rare to find and their exquisite stairs cost a pretty penny above the normal stair. So in summary, I'd say we pretty much use CAD as well as freehand drawings to design our stairs.
